Paddlefish Sturgeon Caviar

The American Paddlefish (Polyodon spathula)  is considered a close cousin of the sturgeon and was first discovered over 300 million years ago.  Although not as popular as other sturgeons, it still produces eggs the size of many well-known sturgeon, with a rich and smooth earthy taste. This prized joy is the perfect less-expensive alternative to other sturgeon roes.
